A quick and flavorful chicken liver fry, prepared with sautéed onions, green chilies, ginger-garlic paste, and a blend of aromatic Indian spices, simmered to perfection.

Heat 3 tablespoons of cooking oil in a pan.
Add 1 medium chopped red onion and sauté until translucent.
Add 3 slit green chilies and 7 curry leaves, then continue to sauté for 1-2 minutes.
Stir in 1 tablespoon of ginger-garlic paste and cook until the raw smell disappears, about 1-2 minutes.
Add 500g of cleaned and cut chicken liver to the pan and mix well, cooking until it changes color.
Season with 1.5 teaspoons of red chili powder, 0.5 teaspoon of turmeric powder, 1.5 teaspoons of coriander powder, and 1 teaspoon of salt. Mix thoroughly.
Pour in 0.5 cup of water, stir, and cover the pan with a lid. Cook for 10-15 minutes until the liver is tender and the gravy thickens.
Remove the lid, add 0.5 teaspoon of garam masala powder and 2 tablespoons of chopped fresh coriander leaves. Mix well and cook for another 2-3 minutes until the desired consistency is reached.
Serve hot with rice, roti, or naan.
