A traditional South African dish featuring a rich and flavorful lamb and potato curry served inside a hollowed-out loaf of white bread. It's a hearty and comforting meal, perfect for sharing.

Dice 1 large onion, chop 2 green chilies, mince 4 garlic cloves, and grate 1 inch of ginger. Dice 2 medium tomatoes and halve or quarter 400 grams of baby potatoes.
Heat 2 tablespoons of cooking oil in a large pot or Dutch oven over medium heat. Add 1 teaspoon of coriander seeds, 1 cinnamon stick, and 3 cardamom pods, and temper them for about 30 seconds until fragrant.
Add the diced onion to the pot and sauté until softened, about 3-5 minutes. Then add the minced garlic, grated ginger, and chopped green chilies, and cook for another 1-2 minutes until fragrant.
Add 1 sprig of curry leaves to the pot and stir for a few seconds. Then add 500 grams of cubed lamb or mutton to the pot, season with 1 teaspoon of salt, and brown the meat on all sides.
Once the meat is browned, add 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, and 1 teaspoon of chili powder. Stir well to coat the meat and cook for 1-2 minutes until aromatic.
Add the diced tomatoes to the pot and stir them into the curry. Cover the pot and let it simmer for about 15-20 minutes, allowing the tomatoes to break down and the flavors to meld.
Remove the lid and stir the curry. Add the halved or quartered baby potatoes to the pot, stir to combine with the curry, and cover again. Continue to simmer until the potatoes are tender and the meat is cooked through, about 20-30 minutes.
While the curry is simmering, prepare the bread. Cut a large white bread loaf in half lengthwise, then carefully hollow out the soft interior from each half, leaving a sturdy bread bowl.
Once the curry is ready, spoon a generous amount of the lamb and potato curry into the hollowed-out bread loaf. Serve immediately, using the removed bread to dip into the curry.
