Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire rack on top.
Pat chicken wings completely dry with paper towels. This is crucial for crispy skin.
In a large bowl, combine almond flour, parmesan cheese, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.
Add wings to the bowl and toss thoroughly to coat each piece evenly with the seasoning mixture.
Arrange wings in a single layer on the wire rack, leaving space between each piece for air circulation.
Bake for 25 minutes, then flip each wing and bake for another 20 minutes until golden brown and crispy.
While wings are baking, prepare buffalo sauce by melting butter in a saucepan over medium heat. Add hot sauce, worcestershire sauce, and vinegar. Whisk until combined and remove from heat.
Remove wings from oven and immediately toss with buffalo sauce in a large bowl until evenly coated.
Serve hot with celery sticks and blue cheese dressing on the side.
