Preheat oven to 400°F (200°C). On a baking sheet, toss 2 medium diced sweet potatoes with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Roast for 20-25 minutes, or until tender and slightly caramelized.
While sweet potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat. Stir in 2 tablespoons of taco seasoning and cook for another 1-2 minutes until fragrant.
