Thinly slice 500 grams of chicken breast and place into a large mixing bowl.
Add 1 tablespoon of cumin powder, 2 tablespoons of paprika, 1 teaspoon of turmeric powder, 1/2 cup (120 grams) of plain yogurt, 2 tablespoons of tomato puree, and 1 tablespoon of lemon juice to the chicken. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Mix everything thoroughly until the chicken is well coated.
Skewer the marinated chicken pieces onto metal skewers.
Lightly brush the chicken skewers with 1 tablespoon of olive oil. Grill or air fry the chicken until it is golden brown and juicy, ensuring it is cooked through. This typically takes 15-20 minutes depending on the method and thickness of the chicken.
For the flatbread, in a separate bowl, mix 2 cups (240 grams) of all-purpose flour with 1/2 cup (120 grams) of plain yogurt and 1/2 teaspoon of salt. Knead the mixture until a smooth dough forms.
Divide the dough into 4 equal portions. On a lightly floured surface, roll out each portion into a flat, oval or round shape.
Heat a non-stick pan over medium-high heat. Cook each flatbread for 1-2 minutes per side, or until golden spots appear and the bread puffs up.
To assemble, spread 1/4 cup (60 grams) of plain yogurt (or a yogurt-based sauce) onto each flatbread. Top with 1/4 cup of finely diced red onion and 1/4 cup of finely diced tomato, mixed with 1 tablespoon of chopped fresh cilantro or parsley. Place one chicken kebab on top of the sauce and vegetable mixture. Optionally, add a side of fries as shown in the video. Wrap up the flatbread to enjoy.
