Place 1 head of garlic cloves in an oven-safe pan, cover with 0.25 cup of olive oil, and bake at 250 degrees Fahrenheit for about 2 hours until softened.
In a bowl, combine 1.5 lbs of cubed chicken breast with 2 tablespoons of olive oil.
Season the chicken with 1.5 teaspoons of lemon pepper, 1.5 tablespoons of taco seasoning, and 0.5 cup of Parmesan cheese. Mix well to coat.
Thread the seasoned chicken onto skewers. Marinate the chicken skewers for at least 3 hours in the refrigerator.
Place the marinated chicken skewers on a baking sheet lined with parchment paper and bake at 425 degrees Fahrenheit for about 20 minutes, or until cooked through and golden brown.
While the chicken bakes, melt 0.5 stick (4 tablespoons) of salted butter in a saucepan. Once melted, turn off the heat.
To the melted butter, add 0.25 cup of Parmesan cheese, 0.25 cup of chopped cilantro, and the juice of 0.5 lime.
Add 2 tablespoons of Thai chili honey to the sauce mixture.
Pour any accumulated chicken juices from the baking sheet into the sauce mixture.
Take about 4-5 cloves of the roasted garlic from Step 1 and mash them into the sauce mixture until well combined.
Taste the sauce and adjust for salt or lime as needed.
Once the chicken skewers are baked, smother them generously with the prepared garlic parmesan sauce. Serve immediately.
