Heat 1 tablespoon of cooking oil in a pan. Add 0.5 cup of chopped onions and 2 cloves of minced garlic, and sauté until fragrant.
Make space in the middle of the pan and add 1 pound of ground beef. Brown the ground beef, breaking it up with a wooden spoon.
Season the browned ground beef with 3 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of chili powder, 1 tablespoon of mirin, 1 tablespoon of oyster sauce, and a drizzle of 1 tablespoon of honey. Mix well to combine.
Stir in a portion of the chopped green onions (reserving some for garnish) and cook for another minute.
Serve the ground beef mixture over 1 cup of cooked rice. Garnish with sliced avocado, a drizzle of 0.5 tablespoon of sriracha mayo, and a sprinkle of 0.25 teaspoon of sesame seeds and the remaining chopped green onions.
