Grate 300 grams of carrots into a large mixing bowl.
Crack 2 large eggs into the bowl with the grated carrots. Add 50 grams of grated low-fat mozzarella cheese. Season with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Mix all ingredients thoroughly until well combined.
Spoon the carrot mixture onto a baking sheet lined with parchment paper, forming four individual, flat, and round 'wraps'. Ensure they are spread evenly.
Bake the carrot wraps in a preheated oven at 180°C (350°F) for approximately 15-20 minutes, or until golden brown and firm. Remove from the oven and let them cool slightly.
