Prepare the whole chicken by patting it dry. Apply approximately 2 tablespoons of hot sauce as a binder, then season generously with 1 teaspoon of salt and 2 tablespoons of taco seasoning, ensuring the entire chicken is coated.
Open 1 can of Miller Lite beer and carefully place the seasoned whole chicken upright onto the can, ensuring it is stable.
Place the beer can chicken onto a preheated smoker. Smoke until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, which typically takes about 1.5 to 2 hours.
While the chicken smokes, prepare the basting sauce. In a pan, combine 4 tablespoons of unsalted butter, approximately 1/4 cup of hot sauce, 1 tablespoon of taco seasoning, and approximately 1/4 cup of Miller Lite beer. Heat gently until the butter is melted and all ingredients are well combined.
Periodically brush the basting sauce onto the smoking chicken, ensuring an even coating for flavor and moisture.
Prepare the Miller Lite Crema. In a blender or food processor, combine 1 cup of Greek yogurt, the juice from 1 lime, 1 whole avocado, 1/2 cup of fresh cilantro, 1 teaspoon of garlic powder, 1 teaspoon of black pepper, and approximately 1/4 cup of Miller Lite beer. Blend until smooth and creamy.
Once the chicken reaches 165°F (74°C) internal temperature, remove it from the smoker. Carefully remove the chicken from the beer can and allow it to rest for 10-15 minutes before carving. Shred or chop the cooked chicken meat.
To assemble the quesadilla, place 1 large flour tortilla in a hot pan. Sprinkle approximately 1/2 cup of shredded pepper jack cheese over the tortilla. Distribute a generous amount of the shredded beer can chicken over the cheese, then top with the remaining 1/2 cup of shredded pepper jack cheese. Place the second large flour tortilla on top.
Cook the quesadilla until the bottom tortilla is golden brown and crispy and the cheese is melted. Use a plate or another pan to help flip the quesadilla to cook the other side until golden brown and crispy.
Remove the quesadilla from the pan, slice it into wedges, and serve immediately with the Miller Lite Crema for dipping.
