In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of red chili powder or paprika, 1 teaspoon of dried herbs (such as oregano or mixed Italian herbs), 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.
Add 2 minced cloves of garlic and 2 chopped green onion stalks to the bowl with the oil and spices.
Place a 200-gram block of paneer into the bowl and spoon the prepared marinade over it, ensuring it's well coated on all sides.
Heat a grill pan over medium-high heat. Once hot, place the marinated paneer (cut into two pieces if desired) onto the pan and grill for 2-3 minutes per side, or until golden brown and slightly charred.
