Clean 250 grams of chicken liver thoroughly by washing it 2-3 times, then cut it into small pieces.
To the cut chicken liver, add 1 teaspoon of salt, 1 tablespoon of ginger garlic paste, 0.5 teaspoon of turmeric powder, 1 tablespoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of garam masala powder, 3 chopped green chillies, 2 sprigs of curry leaves, 0.25 cup of chopped coriander leaves, and 3 tablespoons of oil.
Mix all the ingredients thoroughly with the chicken liver until well combined.
Cover the bowl and marinate the chicken liver for 1 hour.
After 1 hour, place a pan on the stove and add the marinated chicken liver to it.
Stir the liver well, then cover with a lid and cook on medium flame for 3 to 4 minutes.
Remove the lid, stir again, and cook for another 5 minutes, ensuring to stir occasionally.
Continue frying without the lid for another 3 to 4 minutes until all the water from the liver evaporates and the oil separates and floats to the top.
Once the liver is well fried and the oil has separated, turn off the stove.
Garnish with some chopped coriander leaves.
Serve the chicken liver fry hot and enjoy.
