This healthy and delicious Honey Garlic Chicken Fried Rice is high in protein and perfect for meal prep. It's a flavorful alternative to bland chicken and rice, offering a complete meal with balanced macros.

Start by grabbing 600g of diced chicken breast. Add 1.5 tsp of onion powder, 1.5 tsp of garlic powder, 1 tsp of black pepper, and 35ml of soy sauce. Mix well to coat the chicken and set it aside to marinate.
To a pan on high heat, add 300g of frozen mixed vegetables. Follow by adding 2 whole eggs and 150g of egg whites. Cook and mix until the eggs are scrambled and cooked through.
Add 30g of the white part of chopped spring onion to the pan, followed by 560g of day-old cooked white rice. Pour in 35ml of soy sauce and mix everything together until well combined.
Take the fried rice off the heat. Add 15g of the green part of chopped spring onion and 10ml of sesame oil. Mix it all together one more time. The fried rice is now ready.
For the Honey Garlic Sauce, in a bowl, combine 65g of honey, 50ml of soy sauce, 8 diced garlic cloves, 50g of reduced sugar ketchup, and 20ml of rice wine vinegar. Mix all the ingredients thoroughly.
Cook the marinated chicken in a pan on medium-high heat for 4 minutes on each side until fully cooked.
Once the chicken is cooked, add the prepared Honey Garlic Sauce to the pan. In a separate small bowl, mix 1 tsp of cornflour with 80ml of water to create a slurry, then add it to the chicken and sauce to help it thicken. Sprinkle with sesame seeds.
Lower the heat to low and let the chicken and sauce simmer for 5 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
Equally distribute the honey garlic chicken and fried rice into 4 meal prep containers. Optionally, drizzle with Sriracha Mayo before serving or storing. Enjoy your high-protein meal prep!
