Cauliflower is a versatile low-carb cruciferous vegetable popular as a substitute for rice, potatoes, and pizza crust. Rich in choline for brain health and sulforaphane for cellular protection, it's a keto diet staple.
Pulse raw cauliflower florets in a food processor until rice-sized, or grate with a box grater. Cook in a dry skillet over medium heat for 5-6 minutes, or microwave covered for 3-4 minutes.
Cauliflower contains sulfur compounds that release when cooked, especially when overcooked. To minimize odor, don't boil for more than 5 minutes, add a bay leaf, or use roasting or steaming methods.
Store unwashed cauliflower head in a loose plastic bag in the refrigerator for up to 7 days. Cut florets keep for 4-5 days in an airtight container. Brown spots can be cut off.
