Button mushrooms are low-calorie fungi exceptionally rich in B vitamins, particularly riboflavin, niacin, and pantothenic acid. One of few natural vitamin D sources when UV-exposed, they contain beta-glucans that support immune function.
Contrary to popular belief, you can quickly rinse mushrooms - they don't absorb much water. Pat dry immediately. For a cleaner flavor, dry-brush them instead. Never soak mushrooms.
Place mushrooms gill-side up in sunlight for 15-60 minutes. UV exposure converts ergosterol to vitamin D2. Some store-bought mushrooms are now UV-treated for enhanced vitamin D content.
Store mushrooms in a paper bag in the refrigerator for up to 1 week. Don't wash until ready to use. Avoid plastic bags which trap moisture and accelerate spoilage.
